Morning

The harira starts in the morning. The market decides the rest, and the menu is twelve dishes because twelve is what the kitchen can do properly in a day.

02

Afternoon

Bread comes out of the clay oven in the afternoon. Four floors up, the medina keeps working below and the roof gets ready.

03

Evening

At dusk the lanterns are lit and the tables fill. Lunch is quiet. Dinner, around eight, is the reason for the roof.
